Simple Tortellini Soup with Sausage and Fresh Spinach

Tortellini Soup
This is one of our favorite soups and is so easy to make. My kids absolutely love it and it comes together in about 20 minutes, which makes it perfect for a weeknight meal. And it is a meal all by itself, just add some apple slices on the side or any favorite fruit to round out your meal.

I buy the large packets of tortellini at Costco and divide and freeze them in meal size zip lock bags. I chop up fresh baby spinach and toss it in at the very end so that it maintains the pretty dark green color and is just wilted, not overcooked. I serve it with some whole wheat garlic toast or English muffins and a little fresh Parmesan on top. For a vegetarian version you can leave out the turkey sausage or use a veggie/tofu version instead.

6 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)
9 ounces tortellini, cheese, refrigerated package
2 carrots, chopped
7 ounces spinach, fresh baby, chopped
2 zucchini, chopped
1/4 onion, medium, chopped
2 teaspoons olive oil
1/4 cup Parmesan cheese, grated
1 pound sausage, turkey, casings removed

Preparation: Place a large soup pot over medium heat. Place sausage in pot and brown, breaking it up with a wooden spoon. Remove sausage to a bowl. Drain fat. Add olive oil to pot, then add onions and stir. Add chopped carrots and zucchini and stir. Add broth and bring to a low boil, cooking for 2 to 3 minutes. Add tortellini and bring to a low boil. Cook for 8 to 10 minutes according to package directions. At the end, stir in chopped spinach and serve in bowls with a sprinkle of Parmesan cheese.
