Brie Stuffed Mushroom Appetizer

Brie Stuffed Mushrooms
It’s been awhile since I’ve made these, but as I was scrolling through the website recipes and trying to plan my menu for the big day, I stumbled upon these. I love mushrooms, full of vitamin B, low in calories (without the Brie of course). You could use half spinach and half low fat cheese to stuff them with to lower the fat and calories, but for Thanksgiving, I won’t be skimping on the ingredients!

These are very easy to make, and use only a few ingredients. Fresh herbs and garlic add so much to the flavor and the visual appeal, so don’t skimp there either!

Serves: 8
Prep Time: 10 minutes
Cooking Time: 20 minutes
Difficulty: Easy

1 pound mushrooms, Crimini or button or combo
8 ounces brie cheese (or you could use mozzarella or some other)
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon garlic, bottled minced
2 tablespoons parsley, fresh, chopped
2 green onions , finely chopped

Preparation: Preheat oven to 375 degrees. Remove stems from mushrooms and pat dry. Melt butter and olive oil in a microwave safe bowl. Place mushrooms on a baking sheet and drizzle with butter and olive oil mixture. Toss to coat. Arrange mushrooms with hole sides down and cook for about 8 to 10 minutes until just tender. Turn mushrooms over and place one piece of cheese in the center of each. Top with chopped garlic, parsley and green onions. Place back in the oven and bake for about 6 to 8 minutes until cheese is melted. Serve warm on a tray or platter.

Oh, so perfect! I bought a big wheel of brie at BJ’s because it was less expensive that way, but I only need a bit for the app I have in mind, so I think I will make this with some of it too!
