Holiday Appetizer – Shrimp and Cream Cheese Roll with Crackers

Shrimp and Cream Cheese Log
Shrimp cocktail is one of my most favorite appetizers but expensive to serve for a large party. This recipe is elegant enough for a holiday party, and will allow you to stretch your budget while serving a beautiful and delicious appetizer. It is less complicated and takes less time than it looks, you’ll impress your guests when they find out you made it yourself. You’ll need to chill it for at least 2 to 4 hours and it can be made a day ahead of time and refrigerated until ready to serve.

I like to serve it with some crisp, chilled celery sticks or some cocktail crackers, but it is also good on sliced baguettes. I’ve made it with crab or lobster and a combination of them all, and it is deeeliciousssss! Here’s what to do:

Serves: 6 as an appetizer
Prep Time: 15 minutes
Cooking Time: none
Difficulty: Easy

Ingredients:
8 ounces cream cheese, I use the one with 1/3 less fat
1/2 pound shrimp, cooked, peeled and cleaned, then chopped
1/2 cup chili sauce (bottled), and more for serving
2 green onions, chopped (or more if you like)
plastic wrap
12 crackers – or more
4 stalks celery cut into about 3 inch pieces

Preparation: Chop shrimp and set aside 2 tablespoons for garnish. Mix shrimp, half of the green onions and 1/4 cup chili sauce in a small bowl and set aside. Place cream cheese in between two sheets of plastic wrap.

Carefully use a rolling pin to roll out to a rectangle about 10 inches by 8 inches in size.
Cream Cheese
Peel off the top layer of plastic wrap. Spread shrimp mixture over top of cream cheese leaving a half inch around all edges.
Cream Cheese and Shrimp
Carefully roll cream cheese into a roll, peeling back the plastic as you go.

Cover the roll with plastic wrap and refrigerate for at least 2 hours and up to 24 hours. Unwrap onto a plate. Top with reserved shrimp and chopped green onions. Serve on a plate with extra sauce, crackers and celery pieces.

Shrimp, seasoning, and cream cheese go together amazingly well. Love to blend together as a dip.
