Pesto Shrimp and Couscous Packets
I love shrimp. I love pesto. I love this recipe.

It’s one of the easiest recipes you will ever make, and it makes a great date night meal for that someone special! It’s one of those few ingredients, throw together at the last minute kind of recipes, or you can assemble the packets ahead of time, store them on a tray in the refrigerator, then place them in the oven just before dinner.

The presentation is pretty, and it’s nice for company. It is quick and simple, and the clean up is just as easy, leaving you more time to enjoy your company. Scallops, salmon, or other fish would be great as well! Pour a nice glass of chardonnay or other white wine and enjoy!

Ingredients:
1 pound shrimp, raw (medium or large)
2 tablespoons pesto sauce (prepared)
2 tablespoons garlic, bottled minced
6 green onion(s) , chopped
1 tablespoon olive oil
1 cup couscous, dry
1 1/2 cups vegetable broth, reduced sodium
4 cups fresh baby spinach

Preparation: Mix the pesto, garlic, olive oil and chopped onions in a small bowl. Shell and clean shrimp. Pat shrimp dry with a paper towel. Cut 4 pieces of foil, each about 10 inches long. Place one quarter of the couscous in the center bottom of each piece of foil forming a strip with the couscous. Place the shrimp in a row on top of the couscous. Spoon equal amounts of pesto garlic mixture over each package of shrimp. Pour equal amounts of broth over each package. Wrap two of the sides of the foil together leaving a bubble inside for steam to accumulate and then bring the opposite two sides of foil up and fold together to seal each package. Place them on a baking sheet and bake at 400 degrees for about 12 minutes. Remove from the oven. Arrange one cup of spinach over each plate. Top the spinach with the couscous and shrimp from each package and serve.

    This looks delicious! I’ve always used pesto with pasta before, so this is a nice alternative with the couscous. Thanks for sharing!
