Broccoli and Cheese Soup With Garlic Crustini

Broccoli and Chees Soup
I love broccoli and so do my kids (thankfully). I like this soup because it is easy to make, and fresh broccoli is available just about any time of the year. If I can’t find good, fresh broccoli at the market, I use frozen broccoli instead since according to many reports, frozen vegetables are just about as healthy as fresh vegetables these days, due to the methods used to quickly transport produce from farm to freezer.

The soup is creamy, yet has a little texture to it, and I like cooking the broccoli al dente so that it maintains a pretty green color. It’s a turn off if you overcook it and end up with a brownish tint to the soup, so try to avoid overcooking it. We top it with some grated cheddar and some toasted baguette slices for dipping, mmm. Oh, by the way, it’s vegetarian (but not Vegan).

Serves: 6 as a main dish
Prep Time: 10 minutes
Cooking Time: 20 minutes
Difficulty: Easy

Ingredients:
2 pounds broccoli, fresh or frozen
3 carrots
1/2 onion
2 teaspoons garlic, bottled minced
1 tablespoon olive oil
3 cups vegetable broth, reduced sodium
2 cups milk, I use 2% fat
1 1/2 cups cheese, cheddar, shredded
1/2 teaspoon salt
1/4 teaspoon pepper, freshly ground

Preparation: Heat a large pot over medium heat. Add oil and chopped onions and cook for 2 to 3 minutes. Add chopped carrots and garlic and stir. Cook for 2 more minutes. Add broccoli florets and 2 cups of broth. Bring to a low boil and cook for about 5 minutes until broccoli is soft. Place remaining broth in a blender and add the broccoli soup a cup at a time to the blender and blend well. Return blended soup back to the pot. Add milk and heat through. Season with salt and pepper to taste. Divide among six bowls and top with shredded cheese. Serve with some crusty bread or rolls.
