Creamy Potato Cheese Soup with Bacon and Green Onions

Potato Cheese Soup
This is a creamy and delicious soup that I lighten up a little by using cauliflower as well as potatoes to increase the nutrition and lower the calories a little. Once you blend it, you can’t even tell there is cauliflower in it. My kids really like this soup, and it is just as good leftover the next day. You can use more half and half and cheese for a creamier version if you like, but the flavors and texture are great as written. The soup is quick to make, and is a one pot soup other than the bacon, which I cook in the microwave between paper towel layers.

Ingredients:
3 pounds potatoes, russet or other
2 cups vegetable broth for vegetarian version or chicken broth, reduced sodium
1/4 cup butter
1/2 cup half and half
1/4 teaspoon pepper, black, ground
1/2 cup cheese, cheddar, shredded
4 slices bacon, reduced sodium (for vegetarian use veggie bacon or veggie ham)
6 green onions
2 cups cauliflower, optional, chopped

Preparation: Peel and cut potatoes into one inch cubes. Chop cauliflower into 1 inch pieces. Place potatoes and cauliflower in a large pot. Add broth and bring to a boil. Reduce heat to low and cook for 7 or so minutes until fork tender. Use emulsion blender to puree soup or place cauliflower, half of potatoes and broth into a blender and puree for 1 to 2 minutes. Return to the pot and stir in butter, pepper, half and half, and half of the chopped green onions (reserving some for garnish). Cook for about 5 minutes on a low simmer. Cook bacon in the microwave between two layers of paper towels for about 1 minute per slice until crisp. Spoon soup into bowls and top with cheese, crumbled bacon and remainder of green onions.
