Butternut Squash Soup

Butternut squash has such a sweet and nutty taste to it, and is packed with vitamins and antioxidants. It’s very satisfying and tastes much more fattening than it really is. One serving of this rich and delicious soup is only 150 calories, and you will find it very satisfying. This is a quick and simple one pot stove top recipe with lots of flavor! Oh, BTW, the Cheesy Garlic Parmesan Bread in the photo is not so figure friendly, but my kids like to have a delicious piece of it to dip in their soup. I skip the bread and top my with a couple of whole grain croutons. This is super easy to make, and is nice enough for company. Garnish with fresh chives and a dollop of creme fraiche or sour cream.

Serves: 4
Prep Time: 10 minutes
Cooking Time: 20 minutes
Difficulty: Easy

1 medium onion
1 teaspoon garlic, minced
1 teaspoon nutmeg, ground
1/2 cup half and half
1 cup vegetable broth, I use reduced sodium
1/4 teaspoon pepper, black, ground
2 pounds butternut squash

fresh chives for garnish
dollop of creme fraiche or sour cream for garnish

Preparation: Peel the skin from the squash using a heavy duty vegetable peeler. Carefully cut squash in half lengthwise. Use a spoon to remove the seeds. Cut squash into 1/2 inch cubes. Remove the skin from the onion and chop into 1 inch pieces. Place the onions, squash and vegetable stock in a heavy saucepan. Bring to a boil. Add the minced garlic and reduce the heat to medium low. Simmer for approximately 15 to 20 minutes until the squash is soft when pricked with a fork. Use an emulsion blender to puree soup, then stir in half and half (or pour squash mixture into a blender with the half and half and blend until creamy). Return mixture to pan and heat through. Add nutmeg. Serve warm and garnish with chives and creme fraiche or sour cream.
