Slow Cooker Thai Pork Stew

Cooking Time: 6 to 8 hours on low setting
We buy frozen brown basmati rice and microwave it for 3 minutes to get dinner on the table super quickly. Or you can purchase a box of quick cooking brown rice that only takes 10 minutes on the stove top.
2 pounds pork ribs, country style, boneless
2 pepper(s), bell, red, yellow, or green, julienned
1/4 cup teriyaki sauce, low sodium
2 tablespoons vinegar, rice
1/2 teaspoon crushed red pepper
2 cloves garlic, fresh, minced
1/4 cup peanut butter, creamy
6 cups rice, basmati, brown, cooked
1/2 cup green onion(s) , sliced
2 tablespoons peanuts, roasted and salted, chopped
Trim fat from the pork. Place the pork, bell pepper, teriyaki, vinegar, red pepper and garlic into a slow cooker. Cover and cook on low for 6-8 hours. Remove pork from slow cooker and coarsely chop or shred. Add peanut butter to liquid in slow cooker. Stir in pork and then rice. To serve, sprinkle with green onions and peanuts and serve with lime wedges if desired.
