Slow Cooker Pizza

Cooking Time: 3 to 4 hours on High or 6 to 8 hours on Low setting
This is especially terrific on any of the interesting artisan breads you see at the grocery. Also, the veggies are great left chunky, but our kids like them run through the food processor before throwing them in the slow cooker. That way they do not actually know that there are mushrooms and peppers in this (hee hee).
1 pound ground turkey, lean
1/2 pound sausage, turkey
1 onion(s), medium, sliced
1 can (15 ounces each) pizza sauce, prepared
1 can (14 ounces each) tomatoes, canned with italian seasoning, diced
2 cups vegetables, red bell pepper and onion mix, frozen
1 cup mushrooms, Crimini or button or combo, sliced
1 loaf Italian bread or artisan bread, unsliced, halved lengthwise
2 cups cheese, mozzarella, low moisture and part skim milk, shredded
In a large pan over medium heat, cook the turkey, sausage and onion until meat is browned and onion tender. Drain fat. Place mixture into slow cooker. Stir in pizza sauce, tomatoes (undrained), peppers and onions, and mushrooms. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Place bread, cut side up, on baking sheet and broil for 1 or 2 minutes until lightly toasted. Top the loaves with sausage mixture and cheese. Broil for 1 or 2 more minutes or until cheese melts. Cut into about 10 pieces.
