Slow Cooker Pork Chili Verde
Prep Time: 10 minutes
Cooking Time: 7 hours on Low or 4 hours on high
This is super easy but can be very high in fat, so make sure you purchase it lean, and remove all visible fat. The pork is tender and can be used to make soft tacos, burritos, or is great with rice and beans.
1 onion(s), medium
2 1/2 pounds pork shoulder, whole, lean
16 ounces salsa verde
1 tablespoon garlic, bottled minced
1/2 teaspoon salt
8 tortillas, flour or other 8 inch
Cut visible fat from the pork. Cut into 2 inch cubes. Coat a large skillet with cooking spray and heat over medium heat. Season pork with salt and cook in the skillet for 2 minutes on each side until lightly browned. Chop onions and place on the bottom of the slow cooker. Add pork on top of onions. Add garlic and chili verde salsa to slow cooker. Place cover on slow cooker and cook for about 7 to 8 hours on low, or 3 to 4 hours on high. Serve with tortillas.
