Shrimp and Prosciutto Skewers

These are simple and delicious. They make a great appetizer or main dish. You can substitute precooked bacon for the proscuitto, and marinate the shrimp in italian dressing instead of BBQ sauce. They are fairly low in calories and carbohydrates.
1 pound shrimp, raw (medium or large)
1/3 cup barbeque sauce
1/4 pound prosciutto, thinly sliced
1 tablespoon canola oil or vegetable oil
Shell and clean shrimp. Thread 2 to 3 shrimp on to each skewer. Brush with barbeque sauce. Cut prosciutto into 1 inch wide strips and wrap around the shrimp. Heat a grill pan over medium heat. Brush oil over grill pan. Cook skewers on grill for about 3 minutes per side until shrimp is cooked through and no longer translucent. Serve over rice, couscous or a bed of spinach.
