Meatballs with Tomato Sauce
Prep Time: 10 minutes
Cooking Time: 30 minutes
This is a quick dinner my mom made often for us as children. My husband and kids request it often.
1 pound ground beef, extra lean
1/4 cup rice, long grain white
1/2 onion(s), medium, chopped
1 egg(s), large
2 tablespoons milk, 1% fat
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
28 ounces tomato soup, low fat, low sodium
Place both cans of soup and one can of water in a large pot. Heat over medium high heat until lightly boiling. Meanwhile, mix the remaining ingredients together in a large bowl. Form meatballs the size of a golf ball and drop them into the soup. Cover and reduce the heat to medium. Stir occasionally and cook on a medium simmer for about 25 to 30 minutes until rice is soft and meatballs are cooked through. Serve over rice or pasta.
