Slow Cooker Au Gratin Potatoes

Cooking Time: 5 minutes plus 3 to 4 hours on Low
These are so good and so easy, you may want to double the recipe!
3 pounds potato(es), russet, peeled and thinly sliced
1 1/2 cups milk, 1% fat
1 cup cheese, cheddar, light, shredded
1 cup vegetable broth, reduced sodium
1 tablespoon butter
1 tablespoon olive oil
2 tablespoons flour, all purpose
1/4 teaspoon pepper, black, ground
1/2 teaspoon salt
1/4 teaspoon garlic powder
Place a medium saucepan over medium heat. Melt butter and oil, then whisk in flour. Whisk together and cook for about 1 minute. Slowly add broth and milk and cook for about 5 minutes until thickened. Meanwhile, peel and slice potatoes into thin slices. Spray cooking spray in the slow cooker pot. Arrange potatoes in the slow cooker. Pour sauce over potatoes and season with salt, pepper and garlic powder and stir. Cook on low for about 3 to 4 hours until potatoes are fork tender. Top with shredded cheese and place the lid on the slow cooker for 5 minutes until cheese is melted.
