Parmesan Chicken Fingers w/ Honey Mustard

This is a quick and versatile chicken that both kids and adults will enjoy. Serve with BBQ sauce, honey mustard or use leftovers in a salad.
1 1/2 pounds chicken breast, boneless and skinless
3/4 cup parmesan cheese, grated
3/4 cup bread crumbs, Italian herb flavored
3/4 cup milk, 1% fat
2/3 cup mayonnaise, light or reduced fat
2 tablespoons Dijon mustard
1 tablespoon honey
Cover a large baking sheet with foil for easier cleanup. Spray with cooking spray. Pour milk into a medium size bowl. On a large plate, spread breadcrumbs and Parmesan and mix together. Cut each chicken breast lengthwise into 3 or 4 strips about an inch thick. Dip each chicken breast in milk, then in breadcrumb mixture and coat all sides. Place chicken strips on baking sheet with space between them. Spray the tops of the chicken breasts with cooking spray. Bake in a preheated 400 degrees oven for approximately 7 minutes per side until cooked through. To make the Honey Mustard sauce, mix honey, Dijon and mayonnaise in a small bowl, or serve with your favorite BBQ sauce.
