Fruit and Cheese Salad with Mint

The mint and honey add a nice light sweetness to this salad.
1 1/2 cups strawberries, fresh
1 apple(s), fuji or other
1 cup cheese, mozzarella, low moisture and part skim milk
1 tablespoon honey
1 tablespoon olive oil
2 tablespoons orange juice
1/4 cup mint leaves, chopped
Peel the Kiwi and the orange and cut up into small pieces. Place in a medium serving bowl. Cut the apple into quarters and remove the core. Cut into bite sized pieces and add to the bowl. Remove the stems and clean the strawberries. Slice them and add to the bowl. Cut the cheese into small cubes and add to the fruit. In a small bowl, mix the honey, oil, and orance juice. Pour over fruit and toss. Toss in the chopped mint leaves and serve.
